There are many ways to preserve the fruit and vegetables (and even meat) that you grow for longer term storage. Water and air will rot your harvest, removing both will preserve it. Dehydration is a time-proven method. There are many electric dehydrators that can be bought, you can even build your own for a fraction of the money? The base materials and size are up to you, based on your individual needs.
